Frozen Keto Snowmen
This is a wonderful frozen dessert that you can make in almost any flavor you want, and it's low in carbs as well! You can also mold it in your hands to get it into the shape you want to freeze it in.
Supplies
Ingredients (for two two-inch-tall/five-centimeter-tall snowmen):
- 2 1/2 tablespoons coconut oil
- 1/2 cup coconut butter
- 3 teaspoons stevia "sugar"
- 2 teaspoons vanilla extract
- 2 1/2 tablespoons cocoa powder
- Handful of raspberries
- Handful of blueberries
- Handful of pistachios
Utensils:
- Baking pan
- Sram wrap (or wax paper)
- Saucepan
- Spoon to stir the mixture
- Knife
Prepare the Baking Pan
Cover the baking pan in SRAM wrap or wax paper. A cookie sheet will also work just fine. This is what you will be putting your snowmen on to put in the freezer.
Mixing Coconut Oil, Coconut Butter, and Stevia
Mix the coconut oil, coconut butter, and stevia in the saucepan.
Melt the Ingredients
Melt the ingredients in medium heat and stir until well-mixed.
Prepare Flavor Ingredients
Cut up a handful of raspberries and blueberries. Deshell a handful of pistachios and chop them with a knife.
Mix in Flavor Ingredients
I made each flavored batch separately. The one pictured above is of the raspberries. Mix whichever flavor you chose well into the mixture. For the chocolate snowmen, mix in the cocoa powder. For the vanilla snowmen, mix in the vanilla extract.
Put the Saucepan in the Freezer
Take the saucepan off of the stove and let it cool. Then, put it in the freezer. Let it stay in for twenty minutes or until the mixture is hard and not transparent anymore.
Mold Into Snowmen
Take out the pan and, with your hands or a spoon, scrape out the frozen dessert. The dessert will become softer as you mold it with your hands, especially with the chocolate mixture. When the snowmen are done, place them on the baking pan and stick them in the freezer for fifteen minutes.
