Frozen Adult Slushy

This is an amazingly yummy beverage for you and your adult friends on a sweltering summer day. It seems so elegant, but it's super easy with just a bit of advanced preparation.

Supplies

A bottle of Prosecco (notice how I listed the most important ingredient first)

Between 1-2 cups sugar. I use about 1 cup when working with sweetened pineapple juice.

3-4 cups water

1 orange

1/2 lemon

1/2 can frozen orange juice (not diluted)

3 cups pineapple juice (if sweetened only use a cup of added sugar, if unsweetened go ahead and use 2 cups of sugar). This is one of those recipes that's hard to mess up so go with your own tastes.

You'll need a pot, and several freezer containers too.

Making the Sugar Water

This is just your basic simple syrup. Dump the sugar and water into a pot and heat to a boil, stirring along the way. Pretty easy, right?

I've made this recipe many times and adjust it occasionally based on time and supplies, as well as my current tastes/mood. You can also easily increase the size of the batch based on how many guests you're having.

Adding Fruit

While the water is boiling cut up your orange, removing the peel and any pithy pieces. Just dice up the fruit into bite-sized chunks.

Once the water has boiled let it cool a little bit. I'm impatient so I don't wait long. Toss in the orange pieces. squeeze in the juice of 1/2 lemon, avoiding any seeds. Mix in the pineapple juice and OJ concentrate.

Carefully spoon the mixture into freezer containers. It's really sweet and thus sticky. Cover containers and freeze. I suggest multiple containers, especially when you make a large batch of this. That way you can thaw just a single container when drinking a smaller batch (and you won't have to wait as long for the mixture to thaw a bit).

Time for the FUN!

This beverage is more of a slushy concoction than a totally frozen one. About 30 minutes to an hour before you're ready to enjoy, take one or more containers from freezer. Let sit at room temp to thaw a bit (just enough so you can spoon some into a glass, or punchbowl).

Fill a glass about 1/2 full with the frozen(ish) goodness and top off with Prosecco. Honestly you can use the cheap stuff too, because this is so delish. Then just sit back and enjoy (responsibly) with friends!
