Prepare the Potatoes
I bake my potatoes for about an hour at 425°, depending on their size. When they're cool enough to handle, quarter them lengthwise.
Cook
Melt a tablespoon of butter in a sauté pan. (Okay, maybe they are sautéed.) Place the slices in the pan and cook on medium heat. You want to caramelize the potatoes, so adjust the heat as necessary until you've achieved a dark brown crust. Add more butter, if necessary, but don't overdo it. By the time you're done, the pan should be almost dry.
Done!
If you're planning on sweet potatoes anyway, pull a few out of the pile for this treat. Salt and pepper to taste, and enjoy!
