Fresh Mango Pico De Gallo

Pico de gallo also referred to as salsa fresca ('fresh sauce') or salsa cruda ('raw sauce'). It is a type of salsa commonly used in Mexican dishes. It is traditionally made from chopped tomatoes, onions, peppers, cilantro and seasoned with salt, pepper and fresh lime juice.

Pico de gallo can be used in the same way as any type of salsa. Pico de gallo is slightly different from traditional salsas in that it is made with fresh, uncooked ingredients and it contains less liquid. Therefore, is a great snack or side dish served with tortillas as well a delicious topping for tacos and fajitas.

I varied a little bit from traditional pico recipes and added a few other ingredients. I added some fresh mango to my pico de gallo recipe for a touch of sweetness and punch of color. For some crunch, I added chopped English cucumber and I also used green onions (scallions) since I find them to be a bit milder than white or red onions. It came out fantastic! The recipe is very simple and easy to put together. Most of your time will be spent preparing the fruit and vegetables.

Lets start!

Supplies

Ingredients:

2 ripe mangos diced

½ cup English cucumber diced

½ cup firm grape tomatoes diced

¼ cup mixed peppers chopped - (I used 2 small red and yellow mini sweet peppers and 1/2 of a medium jalapeno - 1 medium red and yellow bell peppers would be great too)

2 tablespoons chopped cilantro

1 green onion (aka scallion)

1-2 limes juiced

½ teaspoon salt

½ teaspoon ground black pepper

Prepare All Your Ingredients.

Dice and chop your ingredients.

Combine

Place all the diced and chopped ingredients into a large mixing bowl and combine until well mixed.

Serve and Enjoy!

Transfer the mixed pico de gallo into a serving bowl and serve with tortilla chips.
