Fresh Herb Oil Cubes for Winter

Summer is a great time for enjoying fresh, healthy and aromatic herbs. Maybe you even grow your own in your garden or visit farmers marker often? You can preserve the herbs in oil cubes to keep that summer taste for enjoying later. Freezing in oil doesn't change the taste as drying sometimes do, helps to avoid freezer burn and saves money for the winter season.

Gather the Materials

Materials needed

  • Fresh herbs of your choice (organic are best)
  • Ice cube or another tray for freezing
  • Olive oil

Cut the Herbs

If you need to wash your herbs - wash them and leave to dry on a towel. Mine were clean, so I started cutting them up. I have dill that I want to preserve for winter but you can use any other herbs. Remove the larger stems and cut up the herbs into small chunks.

Place Herbs Into the Tray

Place herbs into ice cube trays. You can create mixed flavors or single-herb cubes - use herbs that you like to use in your dishes!

Just few of the ideas:

  • oregano, majoram, parsley;
  • basil, oregano;
  • parsley, dill, spring onions;
  • thyme, rosemary, oregano;
  • stevia, borage, fennel;
  • etc.

Add Oil

Add olive oil. Don't overfill, because it may expand a bit when freezing.

Freeze

Carefully place the tray in the freezer and freeze overnight.

Label

Transfer frozen cubes into a container or bag, label with a date (at least write the year) and contents. I used a container from another summer essential - ice-cream. :) Place back in the freezer.

Cook and Enjoy

Add herb cubes to various dishes like soups or stews. Cook garlic and onions in the herb oil and enjoy the taste of fresh herbs throughout the winter!
