French Toast Casserole

I am going to show you have to make one of our family's favorite breakfast dishes, French Toast Casserole. One reason it is so nice is that you don't have to work at a griddle for what seems like forever flipping individual pieces of french toast. This recipe is simple and it gives about 8 - 10 nice sized servings. Hope you enjoy!

Oil Pan

Take 1 Tablespoon Coconut Oil and oil your pan. You do not want it sticking to the bottom!

Bread

Take old, crusty bread and break it up into small chunks, putting it into the greased pan. The picture above should show the size you should break your bread into. You should use about half to one loaf bread, or enough to fit into a 13 x 9" pan.

Eggs and Milk

In a separate bowl, crack 18 eggs.

Add 3 cups milk, then whisk together until fully incorporated.

Vanilla

Add 1 Tablespoon Vanilla Extract.

Sugar

Add 1/4 cups granulated sugar, then whisk together until the sugar has dissolved into the egg liquid. You don't want all the sugar to sink to the bottom and done actually goes on your bread.

Pour Eggs

Take your well-whisked egg mixture and pour it over the broken pieces of bread. It should almost cover the bread.

Set in Fridge

Take pan and cover it, then set it in the fridge. You want to leave it there for quite a few hours, or as I did, overnight. This will allow the bread to sop up the eggs and make the bread not as hard when you bake it.

Dry Ingredients for Topping

In the morning, before you take the casserole out of the fridge, preheat oven to 350° F, then make your topping.

1/2 cup brown sugar

1/2 cup flour

2 teaspoons ground cinnamon

Mix the dry ingredients together until fully incorporated.

Butter for Topping

Using a pastry blender, add 1 stick of butter. Work topping until it is crumbly. You don't want it to all stick together, but to be little crumbs.

Add Topping

With topping finished, take casserole out of the fridge. Gently sprinkle topping over casserole until the top is fully covered.

Bake

Take casserole and put into the oven. Set timer for one hour.

Cut

When timer bings, take the casserole out of the oven and allow it to cool for 5 - 10 minutes, then cut.

Set a slice of the French Toast Casserole on a plate and serve with a slice of butter and a drizzle of maple syrup. Enjoy!
