French Toast Bites/Muffins
In this instructable I will show you how to make french toast bites or muffins. The is a little spin on the classic french toast dish. This recipe is really easy to make using very few readily available ingredients, if I can make them you can make them. Let's get baking!

Ingredients:
- 6 large eggs
- 1 1/2 cups of milk (375 mL)
- 1 1/2 Tbsp of vanilla extract (22 mL)
- 2 Tbsp of white granulated sugar (30 g)
- 2 tsp. of cinnamon (10 g)
- 8 to 10 slices of thick bread (I use Texas Toast)
- cinnamon and sugar mixture for topping
Tools:
- muffin pan sprayed with kitchen spray or use shortening (otherwise it will stick!)
- whisk
- bowls
- knife
Mix All the Ingredients
First preheat the oven to 350 degrees F. (176 C). Then mix all the ingredients together in a large bowl with a whisk or fork.
Cut and Dip
Now let's take our bread, I am using a thick "Texas Toast" style bread, but you can use pretty much whatever your favorite bread is for making French Toast. Then let's cut it up into squares. After that throw the bread squares in the bowl. I always start with less bread then I think I will need, so about 6 or 7 slices. Use a spoon and scoop under and then fold it onto itself, don't stir it will mess up the structure of the bread. After doing the first batch check and see how much egg mixture is puddling. You will easily be able to tell. Most likely you will need to cut up a few more pieces of bread, and add it in. We really want to get to a point where there are no puddles.
Scoop, Sugar, Bake
Now we use a spoon and scoop our mixture into our muffin pans. Make sure to use shortening or kitchen spray, even then, these little guys like to stick. But that is okay if the stick a little bit. Once you fill up the muffin pan, its okay if it is mounding, bake at 350 F or 176 C for 25 to 30 minutes until it gets nice and golden brown on top. It should also be dry to the touch. Be careful it will be hot! Now let it sit for a few minutes before serving.
Serve It Up!
Use a small spatula or butter knife to go around the edges and loosen up the french toast muffin. If you are using a silicone muffin/cupcake pan then all the better! Gently pry out the french toast bite and place on a plate. You can add whatever toppings you like. Here I add some more cinnamon sugar, some maple syrup, and some powdered sugar. Throw some fruit on the plate and there you go, a proper breakfast!
