Foods of Fallout: Cook-Cook's Fiend Stew

Cook-Cook the Fiend's famous stew from Fallout: New Vegas.  Did I mention this recipe has beer in it?! Cook-Cook's original recipe in Fallout is just beer, brahmin meat, fresh potato, and jalapeƱo peppers. I added a few more ingredients to make a heartier stew!

 I made a vegetarian version in the photos, since that's what I eat, but a meat recipe follows.

Vegetarian Version
1 pound meat substitute (Textured vegetable protein)
12 oz. beer, ale or lager style
11/2 cups condensed vegetable stock
1 cup assorted vegetables (peas, carrots, corn, celery)
1 onion, chopped
1 potato, chopped
1 jalapeno pepper, whole
3 TB butter
2 TB flour
1 tsp salt
1 teaspoon black pepper
1/4 teaspoon thyme
1/2 teaspoon basil

Meat Version
2 pounds stew beef, cut into small pieces 
12 oz. beer, ale or lager style
11/2 cups condensed beef stock
1 cup assorted vegetables (peas, carrots, corn, celery)
1 onion, chopped
1 potato, chopped
1 jalapeno pepper, whole
3 TB butter
2 TB flour
1 tsp salt
1 teaspoon black pepper
1/4 teaspoon thyme
1/2 teaspoon basil

Vegetarian Version

1. In a small saucepan, melt the butter and add the flour to form a roux. Cook the roux for 5-10 minutes over medium low heat. Carefully whisk in the vegetable stock and beer until there are no lumps. 

2. Add in the remaining ingredients and cook over medium heat until the stew has thickened and the vegetables are tender, about 20-30 minutes.

3. Remove the whole jalapeno. You can chop it up and add it back into the soup if you want a spicier soup, but I left it out.


Meat Version

1. Brown the stew beef in an oiled saute pan and transfer to a soup pot with the beef stock and beer. Add in the herbs and allow to simmer for an hour and a half.

2. In a small saucepan, melt the butter and add the flour to form a roux. Cook the roux for 5-10 minutes. Carefully whisk in some of the warm stock and beer until there are no lumps. Add back into the soup pot.

1. Add the vegetables and continue cooking for 30 minutes or until the vegetables are tender and the stew has thickened. 

2. Remove the whole jalapeno. You can chop it up and put it back in the stew for a spicier version or leave it out.
