Sausage-Stuffed Folded Tortilla Sandwich

I love a hot, hardy sandwich! When I saw the Sandwich Speed Challenge, I started thinking what I could fill a sandwich with. Italian sausage seemed like a great meat to use along with grilled vegetables, melty cheese and some avocado! And how about some tomato slices and fresh spinach, all inside of a grilled tortilla? Boom! I had my idea and it was so tasty!!! The ingredients are enough to make 2 sandwiches. Follow along with this Instructable to see how you can easily make this recipe.

Ingredients Needed

1 haas avocado

1 tablespoon Greek yogurt

1/4 teaspoon cumin

1/8 teaspoon salt

1/2 teaspoon hot sauce

1 teaspoon lime juice

1 medium green bell pepper

1/2 of a medium onion

2 fresh mild or hot Italian sausage links

1/2 cup shredded sharp cheddar cheese

1 cup spinach leaves

1 Roma tomato

2 9-inch flour tortillas

large skillet

pancake turner

Cut the Avocado

Cut the avocado in half. Remove the pit. Scoop out the avocado and place in a bowl.

Mash and Mix

Using a fork, mash the avocado. My avocado was firm so it is chunky.

Stir in Greek yogurt, cumin, salt, hot sauce and lime juice. Set aside.

Cut the Sausages

Lay the sausages on a cutting board. Cut each in half lengthwise, leaving the casing intact on one side, if desired.

Brown the Sausages

Preheat the skillet over medium to medium-high heat. Add the sausages. Cook for about 2 minutes on each side until they are fully cooked and nicely browned. Wipe the grease out the skillet.

Slice the Onion

Cut off the end of the onion and remove the skin. Cut into 1/2-inch slices.

The Pepper

Cut the top off of the pepper. Remove the seeds and the membranes.

Cut the pepper in half. Slice 1/2 of the pepper into 1/2-inch strips. Save the other half of the pepper for another use.

Melt Butter

Heat 1 tablespoon butter in the skillet over medium-high heat.

Add Onions and Peppers

Add the onions and peppers to the butter in the skillet. Fry, turning occasionally, for about 3 minutes until nicely browned. Remove vegetables from the skillet and wipe the skillet out.

The Tomato

Slice the tomato into 1/4-inch slices.

Make a Cut

To make one sandwich, lay out one flour tortilla. Make a cut from the center to the bottom.

Add Cheese and Sausage

Mound 1/2 of the cheese on the top right quarter of the tortilla. Place a cooked sausage over the cheese.

Add Avocado

Spoon 1/2 of the mashed avocado on the left top quarter of the flour tortilla next to the sausage.

The Veggies

Place 1/2 of the onions and peppers onto the bottom right quarter of the tortilla.

Add Tomato

Top the veggies with a tomato slice.

Lay the Spinach

Place 1/2 of the spinach over the entire tortilla.

Start Folding

Gently and carefully start folding your sandwich. Pull the bottom left corner over the top left corner, covering the avocado.

Next Fold

Pull and fold the top left corner over the top right corner.

Final Fold

Lastly, fold the top right corner down over the bottom right corner.

Add Sandwich to the Skillet

Melt the remaining tablespoon butter in the skillet over medium-high heat. Carefully add the sandwich to the skillet.

Brown It!

Let the sandwich cook on one side for about 2 minutes. Using the pancake turner, carefully flip the sandwich over. Press down gently with the pancake turner several times while the sandwich cooks. Let it cook for about 2 minutes until nicely browned.

Place on Plate

Remove sandwich from the skillet and place on a serving plate.

Cut and Eat!

Cut the sandwich in half to make it easier to eat.

Repeat the steps to make a second sandwich.
