Flan De Queso (Spanish Cream Cheese Custard)

Flan is a traditional Puerto Rican dessert. This delicious dessert can be made in many different flavors. What I did was a cheese flan made with cream cheese bathed in caramel sauce. Enjoy!

Supplies

8 inch cake pan

8 eggs

2 12-oz can of evaporated milk

1 14-oz can of sweetened condensed milk

1 8-oz package of cream cheese, softened

1 cup of sugar

Additional items:

Large roasting pan

Medium roasting pan

Preparing the Caramel

In a small sauce pan, medium heat, pot pour 2 cups of sugar and 1/2 cup of water. Stir the sugar and water a bit and melt sugar until dissolved.

Watch so the sugar does not burn. Remove the sugar from heat when it is a golden amber color.

Then pour caramel into the baking pan and make sure caramel covers the bottom.

Let the caramel sets before pouring the custard in the mold.

Getting Ready the Baine-Marie (Water Bath)

Preheat oven to 350 temperature

Get ready a large roasting pan on the bottom, then a medium roasting pan on top of the large. Boil some water to pour into the large roasting pan. Start boiling the water just before you begin preparing the Flan (Custard).

With an electric mixer, combine ingredients:

8 eggs, 1 can of sweetened milk, 2 cans of condensed milk, 1 tablespoon of vanilla extract, 1 8-oz package of cream cheese.

Now that the mold and water bath are ready. Pour the custard mix on top of the caramelized mold.

Add the hot water to the large roasting pan no more than half way up and bake at 350.

Baking the Flan

The oven should be at temperature of 350 for 1 hour and half.

The Flan will cook inside a larger pan filled with water.

This will help the flan to cook evenly with a soft, silky texture.

Testing the Flan

Test the Flan by inserting a wet knife in the center.

If the flan does not seem solid in the middle bake it longer and test again.

If the knife comes out clean, it's done.

Cooling Time

Once the Flan is done, remove from the oven and let it cool down.

Final Step - Unmolding the Flan

Before unmolding, make sure the Flan is fully cooled down before flipping over.

Cover the pan with a plate and flip it over all at once.

If the flan is not completely cooled down, the flan may fall apart just as mine did.
