Filled Pastie

Today we're making a filled pastie with bacon, onion, egg, mushroom and a few other great ingredients.
We had these for dinner but you can also use them for an indulgent lunch.
I hope you enjoy.
The Dough

For the dough you will need:
- 6 cups of flour
- 500 milliliters of warm water
- 4 teaspoons of olive oil
- 2 teaspoons of salt
- 4 teaspoons of sugar
- 4 teaspoons of yeast
Mixing

Add the sugar, yeast and salt to the flour and give it a mix. Make a well in the center of the flour mixture and pour in your warm water and olive oil. Mix the ingredients together until it forms a dough. Leave it in a bowl in a warm environment for half an hour.
Rolling

Separate your dough into 12 balls and roll into squares about 150 by 150 millimeters.
Sauce

When the dough has risen spread a tomato based sauce onto it. I used our favorite recipe which is here. How to make a Rich Tomato based Sauce
Toppings

Fry up 400 grams of bacon and put it into a bowl. Reuse the bacon pan by pouring water onto it until the base is just covered. Then use a fish slice to scrape the bacon browning's off the base of the pan into the water. Boil off the water until you are left with a paste like consistency. Cook three onions and 1/2 cup of capsicum in this. When they are cooked add 1/2 cup of mushrooms to the pan and heat until cooked.
Filling

Use tongs to scoop your filling onto a sauce covered square of dough.
Folding

Fold three sides of your pastie shut and crack an egg into the middle of the pastie. Then carefully close the fourth side.
Cheese!!!

Grate some cheese and sprinkle on top of your pastie.
Next cook them in your oven until crispy and golden brown.
Finished

We have now finished this great meal and it is ready to eat.
Enjoy.
