Fiery Noodle Soup

Hello there!

Today I am sharing the recipe of vegetable noodle soup. I saw a picture of noodle soup on Instagram and couldn't wait to try making this at home. I made this particular soup for the first time and trust me this is one of the best soups I've ever made. This healthy & delicious homemade vegetable soup is super quick to make with just a handful of ingredients. You can make a nonveg version of this soup too. Best soup when you want to make something healthy and yummy. Do try this and let me know in the ' I made this' section. Without any further ado, let's start the recipe.

Supplies

  • Butter.
  • Garlic.
  • Onion.
  • Ginger.
  • Green Chilies.
  • Cabbage.
  • Capsicum.
  • Carrot.
  • Spring Onions.
  • Salt.
  • Black pepper powder.
  • Corn Flour.
  • Noodles.
  • Vinegar.
  • Dark Soy Sauce.
  • Chili Sauce.

Boil Noodles

  1. Take a pot and heat water.
  2. In the water add 1/2 tablespoon butter/oil.
  3. Add 1 tablespoon salt.
  4. Add one cup (200-250 gms) of noodles to the water.
  5. Let it boil. This will take about 7-10 minutes.
  6. Turn the flame off and strain the boiled noodles.
  7. Run the strained noodles through cold water so the cooking process stops then and there.

Chop Veggies

  1. Finely slice all the veggies (Cabbage, capsicum, carrot, onion etc).
  2. You can add any vegetable you like.
  3. Finely chop 2 green chilies, 4-5 garlic cloves and a small piece of ginger.

Sauté

  1. Take a pan and heat 1 tbsp of butter.
  2. To the butter add chopped garlic, ginger, chopped green chili.
  3. Sauté them for 1-2 minutes till the raw smell goes away.
  4. Add sliced onions.
  5. Fry for 2 mins more till the onions get soft.

Veggies

  1. Add all the sliced veggies.
  2. Add salt as per taste and 1 tablespoon of black pepper powder.
  3. Mix everything well.
  4. Let it cook for 4-5 minutes.
  5. Don't overcook, let the vegies stay crunchy.

Water

  1. Add 2 cups of water.
  2. Mix everything well.

Sauces

  1. Add 1 tablespoon of white vinegar.
  2. 1 tablespoon of dark soy sauce.
  3. 1 tablespoon of red chili sauce.
  4. Mix everything well and let the water boil.

Slurry

  1. Take 1 tablespoon of corn flour.
  2. Add 1/4 cup of water and make a slurry.
  3. Gradually add the slurry to the soup and keep stirring it.
  4. Make sure no lumps are formed.

Noodles

  1. Let the corn flour cook for 2-3 minutes.
  2. After 1 boil, Add our boiled noodles into the soup.
  3. Mix well.
  4. Cook for another 2-3 minutes.

Our fiery noodle soup is readyyy.
Serve it hot and garnish it with some spring onion greens. Making this requires very less time. Best when you are craving for both noodle and soup.
