Farmer's Muffins

These are what a farmer would eat.

Everything sourced from the farm!

The Meat

Bake bacon gently at 275 degrees, until mostly done and still tender/pliable.

Steam-cook spicy sausage, covered, while bacon is cooking. When halfway done, pierce sausage to allow juices to come out.

The Veggies

Chop:

Dandelion greens, tomatoes, mushrooms, and jalapenos.

Wedge 1/3 of lime.

In pan, gently melt butter, add juice from limes, and slowly cook.

While this is cooking, shred some cheese.

And chop up the sausage.

Prep Muffins

Arrange bacon slices around edges of muffin hollows. Silicone works best!

Combine veggies, sausage and cheese.

Season with salt/spices as you'd like.

Spoon mixture into muffin hollows.

Add Eggs and Bake

Crack each egg into a bowl first, if you'd like, and carefully lay the eggs onto the mixture.

Bake at 350F for no more than 25 minutes.

Remove from oven, let cool for at least 5-10 minutes.

Plop out, slice in half, let cool a bit and Enjoy!!

Delicious!!

Two is a full meal, Especially perfect with a tall glass of fresh Kefir.
