Fandom Gratitude Cookies

I'm a huge FAN of showing Gratitude. These days gratitude is lacking yet greatly appreciated. This is a simple and affordable way to say "Thank-you", "I appreciate you", "Thinking of you". These little crimson gems freeze well too making it easy show impromptu gratitude.

Supplies

8 oz. weight Rhubarb

1 Cup unsalted butter, I like Lactancia brand

1/2 Cup sugar

2 Cups flour

1/4 tsp. salt

1/2 tsp. vanilla

Hand mixer, scoop, cookie sheet, parchment paper, additional sugar to roll balls in

Roast fresh or frozen rhubarb finely diced 350F for 7 min until not as wet and softened. Optional you can sprinkle with a little salt and sugar if you wish. Cool to room temp.

Beat softened butter, sugar, vanilla and salt until fluffy. Add flour don't over mix. add rhubarb. Scoop into balls, roll in sugar, flatten slightly, press with a fork. Chill 15 min. Bake 350F for 12-15 min.

Makes 20 Cookies

Cool and put into little bags to give away. There's more happiness in giving then receiving, but seeing the faces of those you share with light up! Pure joy and I'm a massive Fan of giving joy :)
