Supplies
1 lb carrots
1 poblano pepper
1 lime
4 cloves garlic
1/4 cup raisins
1/4 cup raw pepitas
1 tablespoon extra virgin olive oil
1 teaspoon cumin
1/4 teaspoon smoked paprika

The Dressing
Chop up half of the poblano pepper. Save the other half for later.
Crush and peel the garlic.
Add the poblano pepper, cumin, paprika garlic and olive oil to the blender. Blend. Note, it will probably not be 100% smooth, but you won't notice once it's on the salad.
Squeeze the juice of one lime into the dressing. Blend again.
Set dressing aside.

Wash your carrots well.
Use a vegetable peeler to shred them. This will create a pretty, curly salad with good texture that will hold up well in the fridge, even after it is dressed.

Thinly slice the poblano pepper.
Toss
Move your shredded carrots and sliced pepper to a large bowl.
Top with raisins and pepitas.
Pour dressing over salad.
Toss until carrots are fully coated.
Adjust spices as desired.
