Electric Blueberry Lemonade Popsicle/Drink Cubes

Welcome to the Adult and Child Summer time favorite! This can be made into a popsicle or flavored ice cube for mixed drinks.

Supplies

You will need to get a couple things:
- 2 lemons
- 1 1/2 cup blueberries ( you can add more if you really want more blueberry flavor)
- 1 cup Brown sugar
- boiling pan
- dry and wet measuring cups
- a sharp knife
- wooden or plastic spoon
- food grater
- ice cube molds or trays
- popsicle molds
- funnel

Wash Your Fruits

Make sure to scrub and clean your fruits as we will need them clean for the next steps.

Time to Zest!

Grab the two lemons and zest them until you see the difference in skin color from bright to dull. Keep this on the plate.

Time to Fill the Pot With Water!

We will take the measuring cup and add 3 and 1/2 cups of water to the cooking pot. You will then need to add the zest into the pot. Along with 1 cup of brown sugar, 1 and 1/2 cups of blueberries.

It's Time to Cook! Not the Blue Stuff Hesienburg Makes But It's Just As Addicting!

We will take the ingredents in the pot to the stove and start the warming process. We will need to let this come to a simmer or until the sugar starts to dissolve. When you start to see bubbles this is the time you want to take your spoon and start to smash the blueberries against the side of the pot to release the flavor into the liquid. When you start to see lots of bubbles or the sugar has dissolved and the liquid is now a nice purple turn the heat off and let the liquid cool to room temp.

Back to the Lemons...

While the liquid is cooling slice a couple lemon slices about a 1/8 inch thick this is optional but makes the popsicles look really nice when finished. Now you will take the halves of left over lemon and squeeze them to get the leftover juice into a cup usually around 1/4 of a cup is where you will end up ( dont forget to pull the seeds out if any fall in). You will need to take the lemon juice and add it to the liquid you have cooling. I poured all my liquid back into the measuring cup for ease of use to pour into the ice mold and popsicle molds.

I take a washed blueberry and put it in the center of my skull ice cubes for the extra pop of fun. Now I will fill them with a funnel almost to the top remember frozen liquids expand so leave a little room for expansion usually 1/8 from the top. Next I moved onto the popsicle molds I placed a slice of the lemon into the mold and filled it up this will go good with the liquid when frozen and give a little surprise when you bite into it. I then placed them into the fridge and now we wait.

We just had to wait till they freeze and pull them out of the molds run a little warm water over the sides if you have any problems removing the popsicle. Also remove the molds and you will see the skull ice cubes with a blueberry for a brain. You can take these skull cubes and add a little vodka and this is a great treat for adults.
