Eggs in the Best Way Possible! (Egg Chilli)
Today I am gonna share a recipe that is complex yet simple. Complex textures and flavors and simple to make. This is an Indo-Chinese appetizer that I absolutely love making and eating. I first tried it in a restaurant and loved it, but I thought something is missing that is the texture of the egg. An egg is such a versatile thing. I personally cook eggs very often and I enjoy cooking eggs/ This dish is packed full of flavors and textures. People of all age groups love this dish. My recipe is one of a kind Egg chili that you would have never heard of before, I have added my special touch to the recipe to make it unique. Without wasting any time, let's start with the recipe.
(Serves 2-3 people)

Supplies
- Eggs
- Spring onions
- Salt
- Red Chili sauce
- Soy sauce
- Green chili sauce
- White Vinegar
- Oil
- Capsicum
- Onion
- Black pepper powder
- Green chilies
- Garlic
- Ginger
- All-purpose flour
- Corn flour
Whisk Eggs
- Take 6 eggs. (Make sure they are at room temperature)
- Break them in a big bowl.
- Whisk vigorously with a whisk or fork for 1-2 minutes.
- Let the yolk and egg white mix properly.
Chopp
Finely chop spring onions. (Green part only.)
Mix
In the whisked eggs, add the chopped spring onions.
- Add 1/2 teaspoon salt (As per taste)
- Add 1/2 teaspoon Red chili sauce.
- Add 1/2 teaspoon Green chili Sauce.
- Add 1/2 teaspoon dark soy sauce (Normal soy sauce would also do).
- Add 1/2 teaspoon of oil (I have used vegetable oil).
After adding mix everything properly.
Don't worry about the color, it's the color of the sauces.
Set for Steaming
Now we have to steam cook the eggs.
To do so I have used a 6-inch cake tin.
- Brush oil over the cake tin so that the eggs won't stick.
- After brushing the oil, pour the whisked eggs into the tin.
- Tap it 2-3 times.
Steam
- Take a deep pot/pan.
- Heat 2 cups of water.
- Place a stand in the center.
- Keep the cake tin over the stand.
- Cover and cook on medium-high flame for 10-12 minutes.
- After 12 minutes, to check if the eggs are cooked or not, insert a toothpick, if it comes out clean then the eggs are cooked.
- If not, cook for another 4-5 minutes. Keep checking in between.
The eggs have risen and are very fluffy
Our egg cake is ready. Turn off the flame and let it cool down.
Cut Into Cubes
- Once the tin is cooled off, flip it over a plate and the egg cake would come out easily. (If not scrape the sides with the help of a knife).
- Cut it into small cubes (1-inch).
Make a Batter
In a bowl,
- Take 1/2 cup of All purpose flour and 1/2 cup of corn flour.
- Add 1/2 teaspoon of salt (As per taste).
Add water little by little and make a smooth lump free paste.
Refer to the video to match the consistency.
Add water/ flour to reach the required consistency.
Deep Fry
- Heat oil for frying.
- Dip the cubes into the batter.
- Coat it nicely.
- And fry them in the hot oil till they are golden brown and crispy.
- Strain the excess oil and remove them on a kitchen towel.
- Keep it aside.
Chop
Finely chop
- 3-4 spicy green chilies. (Slit 1 green chili)
- 2-3 inch ginger.
- 10-12 cloves of garlic.
- Spring onions (Whites and green separate)
Cut 1 small capsicum and 1 onion into cubes. (You can use any of your favorite veggies)
Egg Chilli Begins
- Take a pan, Add 2-3 tablespoons of oil. Heat it.
- Add the chopped green chilies, garlic, and ginger into the hot oil.
- Let it sputter.
- Cook for 2 minutes till the raw smell goes away.
Add the Chopped Veggies
- After sauteing ginger garlic, add in the spring onions white, capsicum and onions.
- Add 1/2 teaspoon of salt (be careful not to add much salt, Remember sauces also contain salt).
- Add 1/2 teaspoon of black pepper powder.
- Mix well.
- Cook it for another 1 minute.
Time for Some Sauce
Add
- 1 tablespoon of dark soy sauce.
- 1 tablespoon of red chili sauce
- 1 tablespoon of green chili sauce,
- 1 teaspoon of white vinegar.
Mix well and cook the veggies with the sauce for 1-2 minutes
Do not overcook the veggies, they should still have a bit of crunch in them.
Make Slurry
- Take 1-2 tablespoons of corn Flour in a bowl.
- Add some water and make a slurry.
- Add that slurry gradually little by little into the pan.
- Mix it well.
Chili Sauce Is Ready
Add a pinch of orange food color to make it look more vibrant.
Add water to adjust the consistency. (I added 1/2 cup of water.)
Make sure that the sauce is enough to coat all the fried eggs we made.
Taste the sauce and adjust the saltiness and spiciness according to your liking.
Add in the Fried Egg Cake
- Add the fried eggs to the sauce.
- Coat all the eggs with the sauce.
- Add some chopped spring onions and mix well.
Ready
Easy peasy egg chili is ready!
Garnish it will chopped spring onion greens.
Serve it hot and enjoy.
This is a very unique egg recipe and I think you should definitely try making this. It requires less than 30-35 minutes and is the yummiest egg recipe.
