Eggplant and Ground Beef

Cajun Smothered Eggplant with Ground Beef (Super Easy and Great Side Dish)

Ever wonder what you can do with Eggplant? This may be a bit different from what you had in mind. This is one of my favorite things my mom used to make for us and it goes really well with rice and gravy (which is a pretty significant part of cajun cooking). Follow my step by step guide to making this very simple yet delicious recipe.

  • 3 lbs Ground Beef
  • 4 Egg Plant
  • 1-1.5 Tbps Nunu's Seasoning
  • About 2 cups of water

Step 1

Peel and Dice the eggplant, smother over medium - medium high heat for about 25 - 30 minutes (until very soft)

Step 2

Brown the ground beef, drain, and stir in seasoning.

Step 3

Using a slotted spoon, remove eggplant from water and stir into ground beef.
