Eggless Tiramisu Cake | No Bake
Tiramisu is one of those classic desserts that is so creamy and so decadent, the coffee cuts through all the sweetness in this cake. Did I mention that this is also no bake and it doesn't have any raw eggs in it? Does anyone else have an issue when they know that there is raw eggs in their food? Fear not! Ingredients and Tools
Ingredients
- 2 ½ cup strong Coffee (cooled)
- 1 Tablespoon Rum Extract
- 1 cup Heavy Whipping Cream
- 1 (8oz) container Mascarpone Cheese (room temp)
- ½ Cup Sugar
- 1 teaspoon Vanilla Extract
- Unsweetened Cocoa Powder
- 2 packs of Ladyfingers Savoiardi
Tools
- Hamilton Beach Hand Mixer
- 8X11 Glass Baking Dish
- Fish Spatula
- Pyrex Mixing Bowl
- Pyrex Bowl 3 set
- Misc. Kitchen Utensils
Prepare Liquid
In a small bowl add coffee and rum extract. Mix together gently and set aside.
Whipping the Cream
Add heaving whipping cream to a large glass bowl and whip until stiff peaks. Set aside.
Work on the Mascarpone Cheese
In another large bowl add mascarpone, sugar and vanilla. Mix all these ingredients until smooth. You can use your electric hand mixer (you might see that the mixture looks like its curdled, not to hesitate).
Combine Whipped Cream and Mascarpone Mixture
Slowly fold in whipped cream to mascarpone mixture, do this in a few batches because you don't want to deflate the whipped cream.
Assemble Tiramisu
Lightly dip ladyfingers in coffee mix and line the bottom of an 8x11 baking dish. Spread cream mixture over the cookies. Repeat with ladyfingers dipped in coffee, spread cream mix on top.
Top With Cocoa Powder
Dust with cocoa powder all over the top.
Cover and Chill
Cover the Tiramisu with plastic wrap and chill overnight in refrigerator.
Enjoy!
Remove the plastic wrap the next day and you can top with more ladyfingers and cocoa powder.
