Eggless Semolina Muffins in Cooker

Learn how to make Eggless Semolina Muffins in pressure cooker. These are very easy to make,super moist and soft muffins. These muffins are baked in pressure cooker, so no special appliance required for baking. Simple to bake muffins.

Ingredients:

Semolina - 1.5 cups

Oil - 1/3 cup

Curd - 1/2 cup

Milk - 3/4 cup

Sugar - 3/4 cup

Baking powder - 1/2 tsp

Baking Soda - 1/3 tsp

Salt - 1/4 tsp

Vanilla essence - 1 tsp

Edible food colours (Green, Orange ) - a pinch (optional)

Method

In a bowl add all ingredients except baking soda, baking powder and food colours.

2. Mix everything to prepare the batter. Rest for 15-20 min.

3. Preheat pressure cooker with salt. Remove the rubber and gasket of the pressure cooker lid and cover it. Heat on medium flame for 10-15 min.

4. Add baking powder along with baking soda. Mix well. Divide the batter in 3 equal portions. Mix both edible colour with cold milk. Add this colour in 2 batter portions.

5. Grease muffin cups and layer the 3 coloured batter in it. Green colour batter at base, then white and then orange batter. Add blueberries in between for added colour and flavour. This is optional step.

6. Tap all the muffin cups and place in preheated cooker. Bake at lowest flame for 20-25 min. Once muffins are ready, check with toothpick/knife. Remove muffins from pressure cooker and cool down completely.
