Eggless Rainbow Cake
A rainbow cake is one of the most popular cakes all over the world. All 6 colors of the rainbow – Violet, Indigo, Blue, Green, Yellow, Orange, and Red look so aesthetically pleasing together. I am sharing the recipe for my eggless rainbow cake cake in this Instructable. It's the ideal cake for any event and looks so beautiful and proficient, you make certain to intrigue everybody around you once you make it. This is a six layered cake, each layer addressing one shade of the rainbow. The end pile of all layers glances so lovely eventually and merits all the exertion that you put into it. We should go through a couple of things you need to know before you make the rainbow cake.
Supplies
Prepare Cake Batter
- Take a cup of curd (at room temperature) in a Large bowl. Add one cup of sugar into curd and whisk well till the sugar get combined with the curd.
- Add 2-4 tbsp. of condensed milk and mix well.
- Add 1/2 cup of oil, 1 tbsp of vanilla essence and mix until fully combined.
- Sieve all the dry ingredients at least 2 times so that more air is incorporated and our cake is fluffy and soft.
- After sieving, Add the dry ingredients to the wet ingredients in batches.
- Add one cup of room temperature milk in batches and make a smooth batter.
- Make sure no lumps are formed.
- Use the cut and fold method to mix the batter. Don't over mix the batter.
- Add 1tbsp of baking powder and 1/2 tbsp. of Baking soda.
- Mix everything well.
- Our Cake Batter is ready!
Coloring
- Divide the batter in 6 Equal parts.( To make a rainbow cake, we need 6 different color cake layers.)
Now, let's color the batter and keep it ready for baking. You can make all colors using only the Primary colors( Red, Yellow, Blue ).
- For purple- Mix red and blue.
- For Green- Mix blue and yellow.
- For Orange- Mix red and yellow.
(Gel colors are ideal for baking as they don't fade away while baking. Powder colors and liquid colors also work fine. Make sure you color the batter a bit dark, because after baking the color becomes a bit light.)
Preheating Oven & Preparing Baking-Tin.
- Take a small (5-6 inch) baking tin and grease it with oil.
- Put a butter/ Parchment Paper or Dust the greased tin with all purpose flour.
- Put the batter into the tin and tap the tin 2-4 times.
- Preheat the microwave oven at 180 degrees.
- You can bake all cakes simultaneously or in batches.
Baking
- Bake each layer of the cake for 12-15 minutes.
(Check by poking a toothpick. If it comes out clean, the cake is done. If not bake it again for 2-3 minutes.)
- Let the cake cool down.
- Demold it and keep it aside.
You might not have 6 cake pans all the same size (I don’t) so keep your cake batter in the fridge while your other cakes are baking. They are really thin so they bake up fast.
- Similarly bake all the remaining 5 layers of the cake.
Make sure you demold the cake after it has cooled or else the cake will break. Let it cool for about 10-15 mins.
Sugar Syrup
In a saucepan,
- Take 1 cup of water and 1/2 cup of sugar.
- Let it boil.
- Keep stirring till the sugar is completely dissolved in the water.
- Turn off the flame and let the sugar syrup cool down.
Whip the Whipping Cream
- Take 1+1/2 Cup of non dairy Whipping cream in a large bowl.
- Whip it till stiff peaks form.
(No need to add extra sugar because whipping cream is already a bit sweet. Always take cold( not ice) whipping cream.)
Just for better whipping, keep the bowl and the beater blades in the freezer an hour prior. Our whipping cream is ready.
Assembly
On a turn table,
- Place a cake board.
- Apply some whipping cream and place the first layer (Violet) over it.
- Brush some sugar syrup on the first layer. This will keep the cake moist.
- Take a dollop of whipped cream and spread it evenly on the cake.
- Place the next layer (Blue) and repeat the same steps (Sugar syrup and whipping cream).
- Assemble all the layers in the sequence (Violet, Blue, Green, Yellow, Orange, Red).
- Crumb coat the cake and freeze it for 20-30 minutes.
Cake Decoration
After one hour,
- Finish your cake with a final layer of whipping cream and smooth it out with your bench scraper and offset spatula.
- Chill it again for 30 minutes.
- After chilling my cake, I added some fancy chocolate letters.
- Decorate your cake as per your liking. I like rainbow cakes a bit simple.
- Chill if for another 1-2 hours before cutting.
Ready
We’re done with our rainbow cake! it looks so pretty! I love how the slices look so colorful and yummy.
This is a bit time consuming recipe, but trust me it is all worth it.
