Eggless Mango Rose Cake

Mango, the king of fruits, loved by everyone is one of the best seasonal and summer fruits, my personal favourite! Tried my hand at this trending mango rose cake. Not only it looks pretty but tastes delicious too. Let's bake it!

Supplies

1 cup powdered sugar
1/2 cup oil
1 cup all purpose flour
1/3 cup milk
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp mango essence
Pinch of salt
1 cup cream
2 mangoes

Tools :
Oven
Baking mould/tray
Spatula
Whisk beater
Bowl

Grease the Mould

Grease the mould well with butter or oil. Dust it with some all purpose flour. You can place butter paper at the bottom side. Keep it aside

Gather All the Ingredients

Gather and keep all the ingredients in right proportion so that it's easier to bake. Also keep spatula and whish beater handy. Take a medium sized bowl.

Mix Sugar and Oil

Add, sugar preferred powered sugar, however I used granulated one. Pour 1/4 cup of oil and mix well with whisk beater.

Add Dry Ingredients

Sieve all the dry components in the bowl having sugar and oil mixture. Add the remaining 1/4 cup oil and whisk it well. Don't worry if few lumps are formed.

Add Milk

Pour milk in the mixture and whisk it. Then add mango essence (if not, then vanilla essence will do too). Mix it well with the whisk beater. Then after having a smooth batter, use a spatula to fold the batter 3-4 times.

Bake

Pour the batter in the already greased mould. Tap it down to avoid air bubbles. Preheat the oven at 180°C for 10 minutes. Then carefully place the mould in the oven and bake for 20-25 minutes.

Cream Frosting

Take a bowl of fresh cream. Add some mango pulp to it and mix well. Keep adding pulp to it till the cream turns light yellow, mango colour.

Cut Mangoes

Wash the mangoes properly. Cut them in half. Now peel them. You can peel and then cut them in half as well. Now chop them vertically in thin slices.

Last Step

Take out the baked cake from the oven. Remove it on a plate while it's hot. Then apply the prepared cream frosting on the top and side as well. Take the mango slices and arrange them from outer to inner side and form a rose design.
