Egg Masala

Egg Masala is a spicy egg dish, which goes well with any rice varieties or bread or flat bread. It is simple to make and tastes great.

Ingredients

4 boiled eggs, shells removed
1 medium size onion, sliced
1 small tomato, chopped
2 large garlic clove, chopped finely
Few curry leaves
1 tsp of cumin seeds
1/2 tsp of mustard seeds
1 tsp of chilli powder
2 tsp of coriander powder
1/2 tsp of turmeric powder
Salt to taste
1 to 2 tbsp of canola oil
chopped cilantro for garnishing

Heat the oil in a pan on medium heat.

Add mustard seeds, cumin seeds, garlic and curry leaves in the heated oil. Saute for 30 secs.

Add onion, saute until it turns to translucent.

Add tomato and saute until soft.

Now add all the spice powders and salt. Mix all well, reduce the flame to low and saute until the raw smells of spices goes away.

Meanwhile, make a slit (like cross) on all eggs in order to absorb the spice taste.

Add the eggs to the masala and gently mix until the eggs coated well with the spices.

Cook for 3 minutes and remove from the heat.

Serve this yummy egg masala with any variety of rice.
