Lekue Ovo Egg Fun

Not too long ago I won a set of Lekue Ovo as a Runner Up prize in the Cooking for One Challenge. Since then I have been having a lot of fun with them and thought I would share one of my creations that involves two of my favorite things: Iberico ham and Thunderjack cheese.

Ingredients:

  • 2 fresh eggs
  • 1 slice Iberico ham
  • 2 slices Thunderjack cheese
  • 2 slices wheat bread
  • 1 sprig fresh dill
  • 2 drops olive oil

Prep Egg Cookers

Place a drop of olive oil in each of the egg cookers and brush oil around the insides well.

Cook Eggs

Crack an egg in each cooker and cover with lids. Place around the edge of the plate in the microwave and microwave on high for 30 seconds or for 1 minute on half power. After that, microwave in 10 or 20 second increments until desired done-ness. We have a 1250W inverter microwave, so I did these for 30 seconds with 2 10 second increments. Be careful removing the cookers from the microwave. There may be some steam coming out of the vent holes on top, so when you grab it, be sure to grab it from the bottom. Leave the eggs in the cookers and set them aside.

Prep the Bread

Using the round food form, slice circular pieces out of the center of the bread (or toast if you like).

Prep Cheese

Slide two round pieces of cheese off the top of the wheel of Thunderjack and cut using the same form from the previous step.

Prep Iberico Ham

Slice a rectangular strip of ham from the slice. Roll it up in a spiral, pinching the last inch or so, as shown in the photo.

Prep Dill

Cut the stem off the dill then slice 3/4s of the stem in half length-wise. Flatten the halves by running the back side of a knife over them.

Assemble

Place the bread on a plate then top with one of the cheese pieces. Add the round egg from the round egg cooker and top with half of the remaining Iberico ham slice. Top that with another bread round and cheese round. Add the square egg from the square cooker and top with the rolled up ham and the dill stem. Garnish plate with remaining dill and ham. Enjoy!
