Egg-Avocado-Super-Sandwich
For lunch I made this delicious hard-to-eat sandwich with avocado, egg, bacon, salad and more. It is easy to leave some ingredients out of if you don't like them or if you are, for example, a vegetarian. Add your own extra ingredients for a personal touch.
Supplies
Ingredients for two sandwiches:
- two sandwiches or 4 slices bread
- lettuce
- two slices cheese (or more if you love cheese as much as I do)
- 1/4 cucumber
- 4 cherry tomatoes
- 4 slices bacon
- 1 avocado ready to eat
- 3 eggs
- 2 tbs mayonnaise
- 1 spring union
- small hand of chives
- peper
- salt
Tools:
- baking pan
- bowl
- cutting board
- knife
- fork
- scissor
Preparations
The first thing to do is start boiling the eggs. I boiled them for 8 minutes so the yellow part is just solidified.
Collect the other ingredients and necessary tools and lay them on your counter.
Cutting and Baking
Pull 2 lettuce leaves from the lettuce crop per bun. Slice the tomato, cucumber and spring onion.
Fry the bacon until crispy. Here in the Netherlands we have very thin slices of bacon, but with the thick slices of bacon it is just as tasty.
Egg-Avocado-salad
For the egg-avocado salad we start by mashing both the avocado and the eggs. I use 1.5 egg per person, but this can of course be more or less to your taste.
If everything is smashed, add 3/4 of you chopped spring unions and the mayonnaise. Add also a little bit of salt and pepper. As last step, add the chives. I always cut the chives in little pieces with a scissor. Mix everything together.
Assamble the Sandwich
The last step is to assemble the sandwich. First put the lettuce, bacon, cucumbers and tomatoes on the sandwich. Second put the egg-avocado salad on top of it. Last but not least: decorate the sandwich with the other spring unions.
