Edible Love Notes
Want to give a unique Valentine this year? How about an edible one, complete with envelope you can eat too? You can use them as cupcake or cake toppers or wrap them in a little cellophane to hand deliver them yourself since these envelopes aren't exactly post office friendly;)
They are made with my favorite magical go-to ingredient: Modeling Chocolate. Being handmade as well as delicious, they will definitely show that special someone they are loved. And they're very easy, so the kids can even help make them!

Step 1: Ingredients & Prep
You'll Need
- A bag of chocolate candy melts - white
- 1/2 cup corn syrup
- Pink food coloring
- Food writer pens
- Cornstarch
- Supplies (Pyrex container, cling wrap, cookie sheet, knife, cookie/fondant cutters, small paintbrush)
First you'll need to make the modeling chocolate. It'll take a few hours for it to set, so plan this project a bit in advance.
Melt the chocolate in a Pyrex container in the microwave according to package instructions. It may not look like it's completely melted, but if you stir well it will get smooth. Fold in 1/2 cup of corn syrup until it starts to come together like a dough ball, then spread out about 1/2in thick on cling wrap covered cookie sheet and top with more cling wrap. Let it sit for at least 3 hours, then knead with hands until soft like play dough (Add a bit of cornstarch to it if it starts to seem sticky).

Step 2: Making the Envelopes
Roll out white modeling chocolate about 1/4 inch thick on a smooth surface dusted with cornstarch. Using a knife, cut a square or for a more elongated envelope, a lopsided diamond like below. The size will depend on how big the heart note going inside is. Fold in the sides, then fold up the bottom and gently press into place. Use the paintbrush to brush away any excess cornstarch on the chocolate.
Step 3: Making the Heart Notes
Add a drop of pink food coloring to the other half of the modeling chocolate and blend in (wear gloves or a sandwich bag on your hands if you don't want any dye on you). Once mixed together it should have a nice bubble gum color. Add a small amount of cornstarch to avoid any stickiness. Roll out to 1/4 inch thick and cut with small heart cutters or hand cut the shapes with a sharp knife.
Step 4: Writing Out the Messages
Using the food markers, write your love notes. Allow marker to dry & place heart notes on top of envelopes. Give to the ones you love. Just don't expect these love notes to be saved (mine were eaten by the recipients immediately).
