Edible Chickpea Cookie Dough (Gluten Free)
Servings: 4-6 servings
This cookie dough tastes exactly like real cookie dough! You would never think it is mainly made of chickpeas...don't worry, though, it doesn't taste like beans. It also doesn't have any granulated sugar because the sweetness comes from honey or agave (and a few chocolate chips:)
It is also so simple! You can whip up a bowl of this treat in less than 5 minutes.
INGREDIENTS:
1 15 oz can chickpeas (rinsed and drained)
1/4 cup creamy peanut butter (or other nut butter)
1/4 cup + 1 tbsp oats
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp salt
1/4 cup pure maple syrup (or agave) (or more if desired)
1 tbsp vanilla extract
1/3 cup chocolate chips (milk or dark, mini or regular)

Food Processor
Add Ingredients
In a food processor, add all the ingredients except the chocolate chips.
Pulse
Turn on the blender and let it run until the ingredients are smooth and combined. You may need to stop a couple times to scrape the sides to make sure all ingredients are being evenly processed.
Chocolate Chips & Enjoy
Transfer the dough into a bowl and fold in the chocolate chips. Enjoy now or refrigerate and enjoy later!
