Easy and Fresh Pasta Dinner in 20 Minutes

My girlfriend Nikki loves pasta more than anyone I've ever met. Her obsession is only overcome with her love for chocolate. This tutorial is designed to prepare an initial 20 minute Italian dinner which also prepares you for a followup 5 minute meal the next day (or several following days if you'd like).

Ingredients

This recipe is SUPER SIMPLE. There's a good chance that many of you already have these things in your home.

The List:

- Angel Hair Pasta

- Salt

- Pepper

- Crushed Red Pepper (I think this recipe might be improved with a fresh spicy pepper chopped into the mix)

- Extra Virgin Olive Oil

- 2 medium sized tomatoes

- Garlic (Preferably Fresh)

Prepare the Pasta

Boil a pot of water (around 8 cups per lb of pasta if you need a measurement).

Add salt to the water for taste. When the water comes to a boil add the pasta and reduce the heat to a simmer. Angelhair is a long pasta type. Breaking it in half lets it fit in the pot so the strands cook evenly. It also makes it easier to eat!

While your pasta is cooking you have about 4 or 5 minutes to prep the rest of the process.

Prepping the Ermmm... Sauce

Cover the bottom of a skillet with olive oil and set to medium heat.

Dice your tomatoes and mince 2 cloves of garlic.

Add the garlic, salt, pepper and crushed red to the olive oil. Keep the mixture moving in the pan to avoid the garlic from browning.

Mix It All Up!

By now your pasta should be ready. Pull it out of the water and strain it well.

Add the tomatoes to the skillet just a moment before you add the pasta. You want your tomatoes warmed up but not cooked. Also, add about 2 spoonfuls of the pasta water to the skillet. The extra liquid will make for better flavor coverage on the pasta.

Finally, add your pasta and turn off the burner. Take a moment to toss everything thoroughly. With so little effort, dinner is prepared.

You've finished the hard part. Now for the fun part. Put it on a plate and add a little extra salt and pepper to taste.

And the most important part. CHEESE. Add as much as you can before your hand cramps and you're certain you'll pass out. BUT don't pass out. You still need to eat.

About the 5 Minute Follow Up Meal

I mentioned that this meal would prep you for followup meals. The best part about this is that it's SUPER EASY and you already probably did this step it by accident.

Make a little too much pasta! That's it! Put your extra unmixed pasta in the fridge and when you want dinner tomorrow you have a very quick and easy prep. Simmer your spices, garlic and tomato and add the pasta straight from the fridge.

You'll can have as many dinners prepped as there are Rocky movies. I hope this was helpful. Enjoy!
