Easy Tomato Soup
In this Instructable, I will show you how to make tomato soup. This easy homemade tomato soup recipe goes perfect with a grilled cheese sandwich or a nice big piece of French bread or just by itself. If you like soup you have definitely got to try this from scratch recipe. It is super simple to make. If I can do it you can do it. Let's get started!

Ingredients and Tools

Ingredients:
- 3 tbsp. Butter (42g)
- 3 tbsp. Olive oil (45ml)
- 1 large onion, diced
- 4 cloves of fresh garlic, minced/chopped
- 1 cup water (235ml)
- 3/4 cup heavy whipping cream (180ml)
- 1 tbsp white granulated sugar (13g)
- 1/2 tsp. dried oregano (2g)
- 6 cups of whole canned tomatoes in juice (42 oz, approx 1200g)
- Salt and pepper to taste
Tools:
- Spoon
- Ladle
- Large pot
- Blender
Soften Those Onions and Garlic
Begin by placing a large pot on the stovetop and setting the burner to medium heat. Once it starts to get warm add the butter and the olive oil. After the butter melts add in the diced onion. Cook the onion for about 3 minutes and then add the fresh garlic. Cook the onions and the garlic for another 3 minutes or so until they get soft. Stir them occasionally.
Gotta Love That Heavy Cream
Now after the onions and garlic have cooked down add the water, heavy cream, sugar, and dried oregano. Stir those ingredients in well. Add a few shakes of salt and pepper at this time.
Tomato Time
Now add in the whole in juice canned tomatoes. Turn the heat up to high and bring the soup to a boil. Use the spoon to push down and break apart the whole tomatoes. You don't have to worry about them too much since we will be using the blender. Once the soup comes to a boil, turn the heat down to medium and let it cook for about 10 minutes. Stir the soup occasionally. After about 10 minute remove the soup from the heat.
Blend and Taste
Now ladle about half of the soup into the blender and blend until smooth. Pour it into another bowl and then repeat with the other half of the soup. Remember the soup is hot! So be careful. :) I love how creamy and thick this soup turns out. If you want it to look redder and be less creamy, reduce the amount of heavy cream. Give the soup a taste and add more salt and pepper as needed.
Serve It Up
Now serve up that yummy soup and enjoy it with bread, grilled cheese sandwiches, or by itself.
