Easy Sweet Potato Pie

In this Instructable I will show you how to make a Sweet Potato Pie. This recipe is easy to make, if I can do it you can do it. Sweet Potato Pies are great for Thanksgiving or Christmas, or any occasion. Let's get baking!

Ingredients:

  • 1 large sweet potato 1lb (enough to make 2 cups)
  • 1/2 cup of softened unsalted butter
  • 1/2 cup of white granulated sugar
  • 1/2 cup of light brown sugar
  • 1/4 cup of whole milk or heavy cream
  • 2 eggs
  • 1/2 tsp. of ground nutmeg
  • 1/2 tsp. of ground cinnamon
  • 2 tsp. of vanilla extract (In the video I made a mistake and said 2 Tablespoons :))

Makes 1 9inch pie.

Bake the Sweet Potato

First we need to bake our sweet potato. I am using one large slightly over a pound sweet potato. I poked some holes in it with a fork, now into the oven at 350 degrees F for 60 to 70 minutes. Or you can boil it for about 50 to 60 minutes. In both cases it will be done when a fork goes into it easily.

Peel and Mash

Now once the sweet potato is done, we let it cool a bit so we can handle it, and peel it. The peel will come right off using your fingers. Then using a fork we mash that sweet potato up. You can optionally use a food processor for this step and all the mixing steps.

Add Butter and Mix and Scrape

Now we add our softened butter and mix it well with a hand mixer or food processor. Then make sure to scrape the sides and mix again, until the butter is all incorporated nicely.

Add Rest of Ingredients Then Mix

Next we add the rest of our ingredients except for the flour and mix it all together until it is nice and combined. Again you may use your food processor if you like.

Add Flour As Necessary

Now we scrape the sides again. If the mixture is too runny, which it very well may be, add flour a tablespoon at a time, I wound up using 3 Tablespoons of flour. We want to thicken it up, until the mixture is almost like an applesauce consistency. We don't want to over do the flour though, so I wouldn't add anymore then 3 Tablespoons.

Add to Pie Pan and Bake!

Next we place the pie crust in the oven and pre-bake it at 350 degrees F for about 10 minutes, not a necessary step, but it helps to keep the pie crust from getting soggy. Then we add our pie mixture to the crust. Scraping the sides as needed to get it all out of the large bowl. Now place it in the oven and bake for 50 to 60 minutes, until the crust is golden brown and the top is not jiggly anymore. It will probably puff up a little bit, and that is ok, after we take the pie out of the oven we will let it cool to set for an hour at room temperature, the top will settle back down and be more flat. After an hour, place the pie in the fridge for about 3 hours to set completely. Serve with whipped cream and or pecans if you like! Enjoy!
