Easy Shaved Broccoli Salad
I eat a lot of broccoli. For a long time I used to just throw away the stem, but it irked me that I had to pay for the the weight of the whole thing, so I had to figure out what to do with the stems. I tried cutting it up and stir frying the stems, but I found them usually too rubbery and not to my taste. What I have eventually settled on is about the easiest possible thing to do with broccoli stems: shave it up and turn it into a salad. I'm not a big salad person, but some days when I've had a lot of heavy food the rest of the week, all I feel like eating is salad, and this salad is the perfect palate cleanser (and takes about 5 minutes to make). This recipe serves 1, but can be scaled up easily.
What you'll need:
Broccoli stems (1 - 2)
Parmesan cheese
Lime (1/4 slice)
Olive oil
Salt and pepper
Peeler

Shave the Broccoli and Parmesan
Not to be too pedantic, but ...shave the broccoli stems and cheese into small strips in about a 3 to 1 ratio.
Dress the Salad
Sprinkle a pinch of salt and pepper (to taste).
Cut a quarter slice of the lime. Squeeze it over the salad.
Pour a thin drizzle of oil over the salad (about equal to the amount of lime juice).
Toss. Eat. Enjoy.
