Easy Scandinavian-style Pancakes

Scandinavian-style pancakes are like French crepes but not as crispy. You can add jam or a syrup and eat them for breakfast or dessert.

Gather Your Ingredients and Equipment

You will need:

3 eggs

2 cups milk

1/8 +3/4 cups flour

1/2 teaspoon salt

3 Tablespoons sugar

3 Tablespoons vegetable oil

An electric frying pan

mixing bowl

egg beater

spatula

Mix Your Ingredients

Beat the eggs in a large mixing bowl. Add the salt and sugar and mix again.

Add the milk and flour in an alternating fashion to the egg mixture. Mix well.

Lastly add the vegetable oil and mix again.

Add the Batter to the Pan

Pour enough of the batter to just cover the bottom of the electric frying pan. Do not add too much- the pancakes will be flimsy and hard to flip.

Start Cooking

Fry the pancake batter at 375 degrees F until it solidifies. Tip the pan occasionally to allow the liquid batter to flow to the sides for faster cooking. Lift up the batter at the sides to allow the liquid to flow under the more solid part of the pancake batter. Do this until the top of the pancake has become firm.

Cut the pancake into 4 pieces and turn each piece over. At this point the four pancake pieces should be ready to serve.

Ready to Serve and Eat!

Transfer the four pancakes to a plate and repeat steps 3-6 until all of the batter has been used up. makes about 10 pancakes (after cutting into fours)

Serve the pancakes with jam or a syrup such as blueberry syrup or maple syrup.
