Easy Quick Cinnamon Rolls Without Yeast

In this Instructable, I will show you how to make cinnamon rolls without yeast. This easy quick cinnamon rolls recipe is perfect for people who only have baking powder at home. They still come out amazing although they have a bit different texture than classic cinnamon rolls made with yeast. These rolls also don't have any eggs in them in case you are worried about that. They are super easy to make using a handful of everyday ingredients. If I can do it, you can do it. Let's get baking!

Ingredients and Tools

Ingredients:

  • 2 1/4 cups of all-purpose/plain flour (270g)
  • 2 tbsp white granulated sugar (25g)
  • 1 tbsp of baking powder (14g)
  • 1 tsp of salt (4g)
  • 6 tbsp of unsalted butter, cubed (84)
  • 3/4 cup whole milk (any milk will work) (180ml)

Filling:

  • 1/3 cup packed brown sugar (65g)
  • 1/3 cup white granulated sugar (65g)
  • 2 tsp ground cinnamon (5g)
  • 1/4 cup unsalted butter, melted (55g)
  • 1 tsp. vanilla extract (5ml)

Icing:

  • 1 cup powdered sugar (confectioner's, icing) (120g)
  • 3 tbsp. butter, melted (42g)
  • 1 tbsp. milk (15ml)
  • 1/2 tsp. vanilla extract (optional) (2ml)

Tools:

  • 10 inch round cake pan (13x9 inch baking pan will work fine too)
  • Bowls
  • Spatula
  • Floss
  • Rolling pin
  • Whisk
  • Fork
  • Wooden spoon or silicone spoon
  • Pastry blender

Mix That Flour

Preheat the oven to 375 F/190 C. In a large bowl combine the flour, sugar, salt, and baking powder. Mix those ingredients all together well with a whisk or fork.

Gotta Love Butter

Now cube the butter with a knife and place it into the flour mixture. Use a pastry blender or a fork and press down onto the butter smashing it and blending it in with the flour mixture. Keep doing this until the butter is completely incorporated and there are no chunks of butter left. You may also just put it all in a food processor and use that.

Milk Time

Now add all of the milk into the blow and mix with a wooden spoon until the dough forms and comes together.

Knead the Dough

Now dump the dough onto a floured table and knead it for about 2 to 3 minutes until everything is incorporated well and a nice dough is formed. Shape it into a disc and set aside for now.

Make the Filling

Now it is time to make the filling. In a medium bowl add the brown sugar, white granulated sugar, butter, and vanilla extract and mix them together with a fork until a nice paste forms.

Roll and Spread

Now roll out the dough with a rolling pin on a floured surface. Roll the dough into roughly a 10-inch wide by a 12-inch long rectangle. Spread the cinnamon and sugar paste onto the top evenly. Alternatively, you can spread on the butter first and then sprinkle on the cinnamon and sugar mixture if you like. I actually do it that way most of the time, but I wanted to show this method.

Roll and Cut

Now roll up the dough lengthwise fairly tightly with the seam down on the table. Now a fun trick I learned in my 8th-grade cooking class for cutting the rolls is to use floss. Place the floss under the dough, then cross it and pull. It cuts it beautifully without damaging the dough. Sometimes if you use a knife to cut it, it will smash it. However, you can certainly use a knife too if you like. Place the cut rolls into a 10 inch round or 13x9 inch butter greased pan.

Bake Those Rolls

Now bake the cinnamon rolls for 25 to 30 minutes until they come out nice and golden brown.

After the cinnamon rolls come out of the oven allow them too cool for about 5 minutes while you make the glaze. You can use a cream cheese frosting too if you like. In a medium bowl add the powdered sugar, melted butter, and milk. You can add some vanilla extract too if you like, about 1/2 tsp. Now drizzle the glaze on top of the cinnamon rolls. Dig a roll out and enjoy it! :)
