First lets prep our eggs. You can use 2 or 3 eggs with a smaller pan (8 to 9 inch) and then add more if you like if you have a larger pan. Next let's add our water and our salt and pepper and then mix up those eggs with a fork or whisk. Here is a note about the water. I don't always add water, so it is optional. Some people add milk or cream, some people say don't add milk or cream. I have made omelets with water, with milk, without any added liquid, etc. It is up to you. I recommend trying all those options. But whatever you do don't add too much a couple teaspoons to a tablespoon for a few eggs is the most you probably want to add. The idea is the added liquid makes the eggs more fluffy. Also there is a bit of debate about the salt, and when you should add it. If you add the salt and then walk away from your eggs and come back 15 to 30 minutes later the eggs will change color and become almost light orangish. I add the salt then mix then make the omelet right away. With that said, add it whenever you like, and try out for yourself. :) If you are not adding salty bacon or salty cheese you may want to add a bit more then a pinch of salt.

The Pan

Now let's turn on our stovetop to medium heat and heat up our pan. It is pretty important to use a good nonstick pan, or a nice cast iron pan that has been seasoned well to the point where it is fairly nonstick. Add a bit of oil, I am using olive oil, then add a dollop of butter. The oil and butter will start to sizzle, it is ready to go.

Pour and Move

Next pour your eggs into the pan. Let it sit for a few seconds then with a good spatula that won't scratch your pan, go to the edge move the edge in toward the middle, tilt the pan and let egg from the top move to that little gap you just created. Then repeat around the edges until you can no longer do it. Then let the omelet sit for another 30 seconds or so, we don't want to over cook these.

Toppings and Fold

Now we put on our toppings. I love using bacon, tomatoes, green onion, and of course cheese! Put it on on half of the omelet. Then you can use a spatula and fold it over right in the pan, or if you have a really nice pan, you can just let it slide right out onto your plate and then let gravity fold that other half over. :) Then if you have extra butter/oil in the pan you can drizzle that over the top if you like or not.

Top It Off

Next we top it off with more cheese, bacon, tomatoes, and green onion. Then serve it warm. Enjoy! :)
