Easy Microwave Peanut Brittle

Supplies
Ingredients
- 1 cup white granulated sugar 200g
- 1/2 cup light corn syrup 160g
- 1/8 tsp salt
- 1 cup dry roasted or raw peanuts 150g
- 1 Tbsp of butter salted or unsalted 15g
- 3/4 tsp of baking soda 3g
- 1 tsp of vanilla extract 5ml
Equipment
- Candy Thermometer
- Microwave-safe bowl
- Silicone spatula or wooden spoon
- Forks
- sheet pan
- Cooking spray, shortening, or butter, or parchment paper
Heat the Sugar and Corn Syrup
Add the corn syrup and sugar to a medium microwave-safe bowl and stir it together, then heat it on high in the microwave for 3 minutes. Give it a good stir, it will be bubbly.
Add Peanuts and Butter
Next, add the peanuts, butter, and salt and stir it. Then back in the microwave, it goes for 3 to 5 minutes until it gets light blonde in color. If you have a candy thermometer (which is ideal) you want the temp to reach 300F/150C which is the hard crack stage.
Stir and Spread
After the mixture heats up to the proper temp remove it from the microwave (use oven mitts if necessary) and add the vanilla extract and stir that in then the baking soda and stir that in. The baking soda is what gives peanut brittle its signature texture.
Now pour it out onto a sheet pan that has been butter, or lined with parchment paper or a silicone baking mat. Spread it out with to forks by pulling it apart, this will thin it out some.
Let Cool and Then Break and Serve
Allow the peanut brittle to cool completely to room temperature. Then you can break it apart with your fingers. Of course use clean hands to do that or wear food prep gloves. Store at room temperature in an airtight container.
