Easy Mediterranean Summer Salad
This quick and easy tomato salad is a nice alternative to a garden salad. Tasty, garden fresh tomatoes, tangy feta cheese, sweet onions, and savory herbs will delight your taste buds.
The Ingredients
A garden ripe tomato
Onion
Feta cheese (may substitute fresh mozarella, goat cheese...)
Fresh herbs from the garden (garlic chives, basil...)
Olive oil (you might try almond oil, seasame oil.....)
Vinegar (I recommend balsamic or rice vinegar)
Freshly ground pepper
Salt

Prep Your Ingredients
Wash and dry herbs.
Wash and thinly slice the tomato.
Thinly slice the onion.
Crumble the cheese
Wash and thinly slice the tomato.

Assemble the Salad
Alternate layers of sliced of tomato and onions on a salad plate. Sprinkle the crumbled feta cheese over the top of the onion and tomatoes. Next add the chopped herbs. Drizzle olive oil and vinegar over the salad. Season with freshly ground black pepper, salt to taste.
