We have used this recipe for years and it works great for waffles too. We are a gluten free family and we think this is the best GF pancake recipe because it is simple and inexpensive. If you have a big family, you may want to make a double batch because they freeze well for those quick microwave mornings later. :)

We have a big family so we always make a nice, big batch by starting with 6 C. rice flour. Then we add 1/2 C. of instant potato flakes and 1/2 C. cornstarch. This is the basic flour mixture, but then make sure to add 1 tsp. salt, 3 tablespoons baking powder (make sure it is gluten free), and 3 tsp. guar gum. This stuff is kind of expensive but it makes everything stick together. You only need a little bit so one bag lasts a long time. You can also add a couple tablespoons of sugar if you want.

Then add the liquids which includes 6 eggs, 1/4 cup oil (we use melted butter or sometimes coconut oil), and 3 cups water. Stir it all up and turn on the griddle. The instant potato flakes will start absorbing some of the extra liquid in the batter after a minute or two. You can always add a little more water if you need to as it starts to thicken.

And that's it! Just oil the hot griddle and fry them like any other pancakes. Flip 'em when the bubbles start to form holes on top and you're WHOLE HOUSE will be smelling great!
