Easy Fruit Freeze Dessert

Easy - tasty. What more does one need to say?

Supplies

Ingredients:

  1. 8oz cream cheese
  2. 3/4 cup granulated sugar
  3. 3 bananas (diced)
  4. 12oz strawberries (diced)
  5. 1 cup crushed pineapple (drained)
  6. non-stick spray or butter
  7. garnish, if desired


Tools:

  1. measuring cups
  2. mixing bowl
  3. fork, knife, and cutting board
  4. strainer
  5. 9x13 freezable pan
  6. freezer


Fancy-shmancy tools:

  1. cookie cutters or molds
  2. wax paper
  3. spatula

Prepare Ingredients

  1. Drain the juice from a can of crushed pineapple.
  2. Measure 1 cup.
  3. If you want to shred a fresh pineapple instead of using canned - go for it. But that doubles the effort of this easy recipe without adding any real value.
  4. Whip the cream cheese and granulated sugar together with a fork until it is smooth.
  5. Dice the strawberries and bananas.
  6. Mix the fruit into the cream cheese mixture.

Freeze and Serve

If you don't want to over-complicate things, simply spoon the mixture into a pan and freeze it.

  1. Lightly coat a 9x13 freezer-safe pan with cooking spray or butter.
  2. Put the mixture into the pan.
  3. Freeze for several hours; overnight if its convenient.
  4. Scoop and serve. (Thaw at least 5 minutes before serving.)

Special occasion? Molds or cookie cutters can make this dessert extra special.

Tip 1: The more intricate the shape the harder it is. All I have are dinosaur cookie cutters. As you can see, I had to use a lot of mint to create enough contrast to identify the shapes. Maybe just stick to stars and emoji faces.

Tip 2: Once you start cutting the mixture it thaws quickly. Pre-freeze a serving tray.

Option 1. Freeze the fruit mixture in the cookie cutter forms on wax paper. You'd need a lot of cookie cutters.

  1. Fill the forms on wax paper and freeze them on the cutting board.
  2. Peel the frozen forms off the wax paper and put them on plates.
  3. Remove the cookie cutters.
  4. Garnish, as desired.

Option 2. Freeze the fruit mixture in the pan.

  1. Use the cookie cutters in the pan.
  2. Use the spatula to place the cutouts on plates.
  3. Collect the excess in a bowl.
  4. Garnish, as desired.
