Easy Flatbread Egg Roll - Kolkata Style

The Flatbread Egg Roll - Kolkata Style or as we lovingly call it "Kolkata Egg Roll" is a popular street food originating in the City of Kolkata, located in Eastern India. It is the go to dish when one is hungry and on the street or when at home you just want to make a tasty quick dish. The dish consists of Indian flat bread and egg, which is super quick to make and super tasty as well. This dish is prepared on weekends at our home for breakfast and it is also popular with our neighbors, who drop in occasionally. The best part about this dish is, that most of the ingredients required are almost always available in the pantry. So please check your pantry and let's start making the Kolkata Egg Roll.

Easy Ingredients

The quantity of dough obtained in this recipe will yield 12 flat breads

For the dough:

  • 400 gms whole wheat flour
  • 400 gms refined flour
  • 4 tablespoons of refined oil
  • 1 teaspoon salt
  • 3 cups Water

Eggs 12, (1 for each roll)

Oil for frying

Onions thinly sliced

Green chilies(optional)

Tomato ketchup

Chili sauce(optional)

Sliced cucumber (optional for plating)

Salt to taste

Main Utensils

  • Pan or Skillet
  • Spatula
  • Egg beater or Fork
  • Rolling pin

Kneading the Dough

First of all take both the flours in a bowl and combine them with 1 teaspoon of salt.

Now add the 4 tablespoons of oil and incorporate it in the flour.

Now take the flour in your palm and form a fist to make a lump of the flour. Now if the flour holds shape, you are good to go and can proceed to slowly add water. If the flour does not hold shape when held in a fist form, add 1 more tablespoon of oil and incorporate it in the flour.

Now form a soft dough by thoroughly kneading it.

Let it rest for 15 mins(optional) if you have time at hand, otherwise also you are good to proceed to the next step.

Rolling Out the Bread

Rolling out Indian flatbread

Make 12 equal dough balls from the dough which has been kneaded.

Now take a dough ball and roll out the bread in a round shape with a rolling pin and some flour (to dust the ball). Be careful not to roll it too thin or it will tear.

Meanwhile warm up the pan.

Baking the Bread

After the pan has warmed add the rolled out bread to the pan.

Bake the bread on both the sides by flipping it with a spatula till it browns lightly on both sides or puffs up.

Now take it out of the pan and place it on a plate or tray.

Now add some oil to the pan.

Now in a bowl break the egg and beat it with salt as per your taste.

Now add the beaten egg to the pan.

Next, add the baked bread to the pan on top of the egg. This will make the egg stick to the bread . Now cook the bread on both sides till golden brown. Now take it out and place it on a plate or tray and let it cool down enough for it to be touched.

Now, once the bread has cooled down enough to touch, arrange the sliced onions on the bread in a line at a side, on top of it add the green chilies and ketchup in layers.

Now roll the bread, by holding the filling in place(please refer to the pictures), after that roll it in a foil wrap or paper wrap or tissue paper like in the picture to make it easier to hold while eating. Your Kolkata Egg Roll is ready to serve.
