Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
INGREDIENTS
- 150g (5oz) Feta cheese
- 150g (5oz) Mozzarella cheese, grated
- 2 egg
- 250g (8oz) filo pastry, 8-10 sheets
- 50g (2oz) butter
- Handful fresh parsley leaves, finely chopped
- Sesame seeds
- Freshly ground black pepper
- Salt optionaly, because Feta is already salted
FILLING
Preheat an oven to 175°C (350°F).
In a large bowl, using a fork crumble Feta cheese. Combine the Mozzarella cheese, chopped parsley, 1 whole egg and the egg white from second (reserve one egg yolk for),and pepper. Toss thoroughly until all the filling ingredients are uniformly combined.
Note: You can improvise, use any type of cheese that you like!
FOLD THE TRIANGLES
Place 1 sheet of filo pastry on a flat surface and brush with melted butter. Top with a second pastry sheet to make 2 layers. Slice the sheet into 3 long strips. Roll the remaining pastry, this will prevent it from drying out.
Place 1 spoon of the cheese mixture in the corner of the first layered pastry strip. Fold over diagonally to form a triangle. Continue, keeping the triangular shape.
Repeat the process until you use all your ingredients.
BAKE
Transfer triangles to a prepared baking sheet and brush the top of the triangle with an egg yolk. Sprinkle with Sesame seeds (need to be mentioned that sesame seads are allergens).
Bake the triangles until golden brown, about 20 minutes.
