This cake is perfect for a simple dinner with some milk. It is soft and spongy, and if you add some butter on top while it is still warm, it is irresistible.

Since it is baked in a low baking pan, it take only 10-15 minutes to bake!

If you don't like poppy seed, you can make a chocolate cake by using cocoa powder instead of poppy seeds.

This recipe makes enough for 8-10 people. You can reduce the recipe by two, to serve 4-5 people.

Ingredients

2 eggs

130 grams sugar

500 grams sour cream

330 all-purpose flour

2 tablespoons poppy seed or cocoa powder

2 teaspoon baking powder

Part 1 of Making Batter

Add flour and mix on medium speed, using mixer.

Add poppy seed or cocoa powder. Mix.

Add baking soda. Mix thoroughly to make sure there are no lumps. The batter will be quite thick.

Now you are almost done!

Baking

Pour dough into parchment paper lined and greased baking pan. I used a 12.5''by18" pan, but you can use two smaller pans.

Use a spatula to evenly distribute the batter.

Bake at 400F for 10 - 15 minutes or until golden.

Eat while warm.

If you want it to stay soft for a longer time, wrap in plastic wrap while warm and let cool.

Store in an airtight container.
