Easy Coconut Pie

Every year for Thanksgiving my Mother always makes a whole bunch of pies.  Unfortunately, I don't always get to spend Thanksgiving with my family because they are so far away.  In the last couple years, I started making my mother's coconut pie so that I could have a piece of home during the holidays.  It is a very rich pie that is super simple to make!

Items Needed for Pie:
1-1/4 Cup Shredded Coconut
1/2 Cup Milk
1/4 Cup Butter
1 Cup Sugar
3 Eggs
1 Teaspoon Vanilla

1 Pie Crust

Bowls
Spatual
Mixer
Pie Pan

Cool Whip for Topping

I also used food coloring and kitchen scissors which are not listed in the original pizzelle instructable!

Turn Oven On

Turn the Oven on to 350 Degrees. Then get your pie pan ready by placing the pie crust it in and folding over  the edges.

Make the Coconut Mixture

Pour the milk over the coconut and set aside.

In a separate bowl, cream a 1/4 Cup butter and 1 Cup sugar.  Then add 3 eggs and 1 teaspoon of vanilla and mix.

Finally, fold in the coconut and milk with a spatula. .

Cook

Place the Coconut pie in the oven and bake for 30 minutes.  You want the top of the pie to be golden brown. Let pie cool & then put in fridge to Chill!

Add Cookie Decorations

To add some decoration to the pie, I made pizzelle cookies that I added food coloring to. To see the method of how I made the cookies click here  https://www.instructables.com/id/Pizzelles/   I used scissors to cut around the flower design and then placed the cookies on top. The great thing about pizzelles is that while they are still warm you can make shapes out of them!

When serving, you may want to add cool whip.
