Easy Cinnamon Roll Coffee Cake
When I was a kid, my mom used to make me the best Birthday cake every year. Everyone would always ask me for the recipe and I would tell them she uses the Pillsbury boxed cake mixes. We made them so many times growing up, it really is the perfect cake- so easy to make and just tastes great.
As I got older, I got super into baking and stopped using the boxed mixes for a while. But learning more about baking really just opened up a whole world of possibilities. The best thing about cake mixes is that you can customize them in any way you'd like, while still keeping the baking process short and easy.
One of my favorite desserts is Cinnamon rolls. So I thought to myself - why not take my favorite childhood cake and make a cinnamon roll version of it. So that's exactly what I did. This cake is every cinnamon lover's dream, it's moist and fluffy, has a cinnamon sugar swirl and covered with a sugary glaze. It really is amazing... and so easy to make! Let's dive in.
Supplies
- 1 box of vanilla cake mix
- vegetable oil as stated on the box (I used 3/4 cup)
- 4 eggs
- 1 container sour cream (200 ml)
- 1 cup dark brown sugar
- 1 tablespoon cinnamon
- 1-1 1/2 cups powdered sugar
- 1-2 tablespoons milk
- stand or handheld mixer
- 1 big mixing bowl
- 2 small bowls
- measuring cup
- measuring spoon
- 1 22X23 cm cake pan
Preheat your oven according to the instructions on the cake mix box.
Line a 22X33 cm pan with parchment paper if needed (I used one that did not require it).
Pour the cake mix into a big mixing bowl.
Add the amount of oil stated on the box, eggs and sour cream. Mix to combine.
Pour the batter into the cake pan and spread evenly.
In a small bowl, mix dark brown sugar and cinnamon.
Take dollops of the sugar mixture using a spoon and drop them randomly on top of the batter.
Then use a knife or spoon to swirl in the mixture, creating a beautiful marbled pattern.
Bake according to box instructions.
Remove from oven and allow the cake to lightly cool.
In a small bowl, combine the powdered sugar and milk, adding the milk little by little. Note: Adjust the quantity of milk according to your preference; add more for a thinner glaze or less for a thicker consistency. If you prefer the latter, you might want to use more powdered sugar - it really is up to you! I prefer a generous amount of glaze on my cake :)
Spread the glaze on the cake. Enjoy!
