Easy Chocolate Ice Cream (Eggless and No Ice Cream Machine)

In this instructable I will show you how to make chocolate ice cream. This homemade chocolate ice cream recipe is really easy to make, few ingredients, and doesn't require any eggs, or an ice cream maker. You can use an ice cream machine if you like however. Instead of an ice cream machine we will use a couple of plastic bags and ice! It is fun to make and a great activity to do with the family. Let's get started!

Ingredients/Tools

Ingredients:

  • 1 cup of heavy whipping cream (240mL)
  • 1 cup of whole milk (250mL)
  • 1/2 cup of white granulated sugar (115g)
  • 1/4 cup of semi sweet chocolate chips (40g)
  • 2 Tbsp. of unsweetened cocoa powder (30g)
  • 1 tsp. of vanilla extract (5mL)

Tools/Items needed:

  • Rock salt (about 1 cup)
  • Zip Lock bags, I am using 1 Gallon size
  • Sieve
  • Towels
  • Large Bowl
  • Whisk

Combine Milk and Cream

First let's combing our whole milk and our heavy whipping cream in a bowl, then use a whisk to mix them together.

Heat, Add, Whisk, Rest

So now we will heat up our milk and cream in the microwave or on the stove top until it gets really hot, about 1 minute to 1 minute 30 seconds in the microwave. We don't want it to boil. Now add in your chocolate chips, sugar, and your cocoa powder using a sieve, or sifter. Give it a gentle stir, not much, don't worry about trying to mix in the the cocoa powder completely. Now let the mixture rest for 5 to 10 minutes, this will allow the chocolate chips to melt, and the heat helps dissolve the sugar and to bring out the flavor of the cocoa powder.

Mix, Whisk, Cool

Now mix in your vanilla extra, and stir until everything is combined really well. Now let your ice cream base cool to room temperature, or place in the fridge to chill for about 30 minutes. We don't want the ice cream base to be warm when we put it in our homemade ice cream machine, it will take much longer to harden up.

Once our ice cream base has cooled, it is time to make our homemade ice cream machine! Add the base to a zip lock bag, then seal it. Make sure you don't have a lot of extra air in it. Then take another bag and add in some ice and your rock salt. Next add your ice cream base bag inside the bag with the ice. Then add more ice on top. Wrap it up with a towel or two and start to shake! Shake for 5 to 15 minutes, until the base hardens up. This is a great way to burn some calories before you eat the ice cream! lol

**Note if you halve the recipe, this base hardens up much quicker.

Cover and Chill

Once we are done shaking, your ice cream could be ready to eat. Usually it will be about soft serve stage at this point. You can eat it like that if you want out of the bag, or place in a container, then place some plastic wrap on top. And put in the freezer for 4 to 6 hours, I do it over night. This will give you a nice firm ice cream.

Serve It Up!

Take our that ice cream scoop and serve some up! :) Store in the freezer any left overs.
