Easy Chocolate Chip Cookies

It's often difficult to find the perfect chocolate chip cookie recipe, so I decided to share mine with you to (hopefully) make your search a little easier :)


I grew up eating these, so please enjoy this recipe!

Supplies

  • Stand mixer with paddle attachment (I used a 5 quart mixer)
  • Cookie sheet (any size works as long as it fits in your oven)
  • Cookie scoop big enough to make 2 oz balls
  • Parchment paper to line the cookie sheet
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup soft butter
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups chocolate chips

Butter and Sugar

Before you do anything with butter and sugar, preheat your oven to 350 degrees F, or 176 degrees C. Then, you can take out your butter and put it in the mixing bowl.

If it's not soft, that's OK! Pop it in the microwave on a plate for about 15 seconds, but make sure to watch it so it doesn't melt all over the microwave (happened to my mom once, NOT fun to clean).

After the butter's in, you can scoop your brown sugar. Press it down in the measuring cup first so it's all packed in, and add more if it's less than a cup after you pack it. Then, add your white sugar and 1 teaspoon vanilla, and turn on your mixer to medium-high speed until the mixture is lighter and well combined.

Eggs

Next up is the eggs! It doesn't matter if they're cold and fresh from the fridge or not, so don't worry about that.

A little tip I learned is to crack the eggs into a separate, preferably clear, container. That way, you can see any eggshells that might have fallen in. After you make sure there's no shells, you can go ahead and put the eggs into the bowl and mix at low speed.

Dry Ingredients

Next up is the dry ingredients! You'll need the flour, baking powder and soda, and salt.

First scoop your 2 1/4 cups flour. Make sure to level the scoop so it's flat on top, like the above photo.

Put that in the bowl, and then your teaspoon of baking soda and teaspoon of baking powder.

Finally, add 1/2 teaspoon of salt, and mix until it's combined, but not for too long.

Chocolate Chips

The last step is the chocolate chips! If you think the dough needs more chocolate chips, you can totally add more, or less if you think it's too much.

You can add nuts or other mix-ins if you want, but I just did chocolate chips.



Baking

Now the dough's all done and it's time to bake! Use your scooper to measure 2 oz balls and place them on the parchment paper lined tray in alternating rows of two and three dough balls, making sure they have enough room to spread and not stick together. You can also change how many are in each row depending on the size of your pan, so don't worry if you have a small pan.


Bake them in the oven for 12-15 minutes (make sure it's on convection bake!), let them cool, and enjoy!


To freeze leftover dough, scoop dough balls onto a lined pan right next to each other and put them in the freezer to bake later!
