Easy Chilaquiles

What are easy chilaquiles?  Check it out: fried tortillas, eggs, cheese, spicy tomato sauce!!  Combine those powers together and you get an awesome breakfast.  I guess you could use (cringe) tortilla chips to make this even faster....just don't tell me you did.

Ingredients

6 corn tortillas
oil for frying
5 eggs whisked
1 can of El Pato sauce
shredded cheese (whatever you have in the cool box).

Heat the oil in your pan (use canola or vegetable oil) on medium high heat.  Stack your tortillas on top of one another, get your trusty knife and cut into triangles.  Once your oil is hot, add your tortillas in 2 shifts.  Don't crowd your pan because you want the tortillas to get a little crispy.  Add tortilla shift one back in the pan with tortilla shift two and add your eggs.  Stir the eggs around to cook, season with a little salt, lower the heat to medium low.  Add your can of El Pato sauce and stir, coating all the eggs and tortillas.  Turn the stove off.  Add as much shredded cheese as you like and stir until the cheese melts.  Plate it up, grab a fork, say your thanks and dig in!  Happy Eating!
