Easy Chicken Tortellini Dumpling Soup
Ingredients:
Serves 4
- 1 1/2 pounds of boneless chicken breast
- 3-4 medium carrots, peeled and diced (can substitute bag of baby carrots)
- 3-4 stalks of celery, diced
- 1 medium onion, diced
- 6 cups of low-sodium chicken broth
- 1 cup water
- 1 tsp garlic salt
- 1 tsp Italian seasoning
- 2 Bay leaves
- 2 cups tortellini
- Salt and Pepper to taste
Optional: Dumplings
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon of salt
- 1/2 cup of milk
- Mix together until dough forms
Instructions:
Step 1: Add all ingredients besides the tortellini and dumplings
Step 2: Cook in Crock Pot or Slow Cooker for 6 hours on low
Step 3: Add both tortellini and dumplings until fully cooked, approximately 10-15 minutes
Step 4: Season with salt, pepper, and parsley
Step 5: Serve & Enjoy!

Add 6 cups of low-sodium chicken broth, plus 1 cup of water

Add in 1 tsp of garlic salt, plus 1 tsp of Italian seasoning

Add 2 - 3 Bay leaves
Step 8
Turn on the Crock Pot to low heat, cover, leave for 6 hours
Step 9
Add tortellini pasta
Optional: Add dumplings
Keep on low for 10-15 minutes
Step 10
Sprinkle parsley, add salt and pepper to taste, serve & Enjoy!
