Easy Chewy Oatmeal Raisin Cookies

Ingredients:
- 3 eggs
- 1 cup raisins
- 1 cup of butter
- 1 cup of brown sugar
- 1 cup of white sugar
- 1 tsp of vanilla extract
- 2 1/2 cups of all purpose flour
- 2 cups of oatmeal
- 1 tsp of salt
- 1 tsp of cinnamon
- 2 tsp of baking soda chopped nuts are (optional)
Tools:
- hand or stand mixer
- whisk
- spatula
- wooden spoon
- spoon
- baking sheet (un-greased)
Crack Eggs and Combine With Raisins
First we want to crack open our eggs and add them to a bowl then whisk them really well, then add our raisins. Now we will let the raisins soak in the eggs for 30 minutes. This will help keep the raisins soft, when they bake in the cookies.
Cream Butter With Sugars
After the raisins have soaked we preheat the oven to 350 degrees F. Now we cream our butter with our sugars and the vanilla extract.
Mix Dry Ingredients
Next we combine our dry ingredients by adding the salt, cinnamon, and baking soda to the flour, then whisk them together.
Add Flour
Now we add about 1/3 of your flour mixture and combine with the rest of the ingredients, using the mixer.
Add Eggs/raisins
Then we add our soaked raisins and eggs to the mixture, after which we add about another 1/3 of the flour mixture. Then using a wooden spoon we mix.
Add Rest of Ingredients
Now we just add the rest of the flour and the oatmeal. Continue using the wooden spoon and combine until it is all incorporated and you wind up with a nice thick cookie dough.
Bake Those Cookies
Next take a spoon and created small cookie balls and place on an un-greased cookie sheet. Bake them in the oven at 350 degrees F for 10 to 12 minutes. Bake them until lightly golden brown. Then let them sit on the baking sheet for a few minutes before transferring over to a cookie rack.
