Easy Cheesy Quesadilla
Quesadilla is a Mexican cuisine dish, consisting of a tortilla that is filled primarily with meat or vegetable stuffing and cheese. This can go with so many things. In this recipe I have started from scratch. Certainly it is one of the easiest, simplest and yummiest recipe. My version of a Quesadilla is very easy and quick to make. So it is perfect beginner friendly dish. An ideal go-to recipe for breakfast, snacks, plus kids love it. This recipe requires minimum ingredients. Do try this super cheesy Quesadilla recipe. Let's get started.
Supplies
Ingredients we need:
- Plain flour( All purpose Flour)
- Wheat Flour
- Salt
- Black pepper powder
- Oregano
- Chili Flakes
- Butter
- Cheese (Any type of cheese you like: I have used Cheese spread and cheese Slices. Mozzarella cheese would be amazing )
- Tomato
- Carrot
- Capsicum
- Corn
- Onion
- Garlic
- Green Chilies

Preparation
- Take all the vegetables you like. Here I have used capsicum, carrot, Tomato and onion.
- Dice them into small/ medium sized cubes as shown in the picture. (Do not Finely chop them or else they will get mushy when we cook them.)
- Dice all the vegetables.
- If you are using corn, Make sure you use boiled corn.
- Finely chop 2 Green chilies and 4-5 cloves of garlic. (You can adjust the green chili as per your liking.)
Here our Prep is done, we can now start with our recipe.
Preparing Dough
- Take 1 cup of All purpose Flour in a big bowl.
- Add 1 cup of wheat flour.
- Here if you wish you can take all purpose flour only ( As i wanted to eat healthy, I have used 1 cup of plain flour and 1 cup of wheat flour).
- Gradually add Luke warm water and make a nice soft dough.
- Knead the dough well.
- Make sure the dough is not too hard.
- After the dough is ready, Take 1 tablespoon of oil/ softened butter, Mix with the dough and knead it again for 1-2 minutes.
- Keep the dough aside. Cover it with a damp cloth and let it rest for about 10-15 minutes till we make our stuffing.
Stuffing
- Heat a pot.
- Add 1 tablespoon of butter to it.
- Add the Green chilies & Garlic.
- Sauté for a min.
- Add the Onions and sauté it for one more min.
- Add all the Vegetables.
- Add Salt as per taste.
- Black Pepper powder around 1 teaspoon( according to you spice liking).
- Add 1 tablespoon red chili flakes.
- 1 tablespoon Oregano.
- Mix everything well.
- Let the vegetables half cook.
- It will take around 2-3 minutes.
- (Don't overcook the Veggies.)
- Turn off the stove, keep it aside and let the stuffing cool.
- Our stuffing is ready, let's move to the next step.
Making Tortillas ( ROTI )
- Portion the dough into equal parts and make balls of it.
- Flatten the dough ball.
- Dust some flour and roll the dough thin with the help of a rolling pin.
- Roll it as thin as you can.
- Do the same for the rest of the dough balls.
- Heat a pan.
- Place the tortilla on the pan.
- Heat the tortilla until air pockets are formed.
- Slightly cook it on both the sides and then take it off the flame.
- This will take 1 min on each side of the tortilla.
Do this for the rest of the tortillas.
Lets Make It!
- Take the cooked tortilla.
- Apply cheese spread evenly on one side of the tortilla.
- To make the Quesadilla taste even more better, apply some pizza sauce and spread that evenly.
- Now put the stuffing that we made before on half side.
- Over the stuffing put some Cheese slices ( Any type of cheese that is available).
- Fold the tortilla.

- Now we have to roast this in Butter.
Melting Cheese
- Heat a pan.
- Add butter and let it melt.
- Place the folded Tortilla over the pan.
- Let the Cheese melt. This will take about 1 min or less.
- Check it and once the cheese is melted nicely, flip over the quesadilla carefully with the help of a spatula.
- Do it carefully or the stuffing will fall.
- The tortilla should be now turned brown from one side. Let the other side cook and turn brown like the previous side.
Ready
Our Cheesy Veg Quesadilla is now ready!
Cut the quesadilla into wedges.
Serve it with some Mayonnaise and ketchup or any other sauce.
