Easy Caramel Corn

Hello, in this instructable we will be making Caramel Corn. This recipe for Caramel Popcorn is super easy to make, the results are amazing. If I can do it, you can do it. After making this, you won't want to buy the expensive store-bought kind. Follow the steps below, or watch the short video tutorial, or do both. Enjoy and Happy Snacking!

Ingredients:

-6 to 7 quarts of freshly made popcorn (you can have more, depending on how much coverage you want of the caramel)

-2 cups of brown sugar (400 g)

-1/2 cup of corn syrup (150 g)

-1 cup of butter (2 sticks or 16 tablespoons) (226 g)

-1 tsp of salt (8 g)

-1/2 tsp of baking soda (4 g)

-1 tsp of vanilla extract (5 ml)

-nuts (optional - add peanuts, cashews, almonds, etc.)

Tools:

-rubber spatula

-wooden spoon

-baking sheet pan

-Artisan Mat, parchment paper, or cooking spray

-sauce pan

Combine Ingredients

First let's go ahead and preheat the oven to 250 Degrees F (120 C). Then let's combine our sugar, salt, corn syrup, and butter in our sauce pan, then take it over to the stove top.

Stir

Now on medium heat we want to stir the ingredients until they are melted and start to boil. Once the mixture starts to boil, we let it sit for 5 minutes stirring occasionally.

Add, Stir

Now we turn off the heat, and add our baking soda, and our vanilla extract. Then stir it together.

Pour, Stir, Pour, Stir

Next, we pour out about half of our warm caramel onto our popcorn. Then give it a good stir. Then we add the rest of our caramel, and then again we stir it until it is all nice and evenly coated.

***Note, if you like your popcorn with less caramel on it, go ahead and either make more popcorn and keep this caramel recipe the same, or use the same amount of popcorn, and maybe cut this recipe in half.

Place on Baking Sheet

Now we take our sticky caramel popcorn and place it on our baking sheet, lined with an Artisan Mat, or parchment paper, or greased. Then spread out the popcorn until it is nice and flat. If you are making more then this, use two sheets, don't try and put it all on one sheet. Now we go ahead and put this in our preheated oven, and bake it for 15 minutes.

Bake, Stir, Bake Stir, Etc

After 15 minutes we take it out of the oven, and stir it all around. Then back in the oven for 15 more minutes. Then repeat the process, for a total of 1 hr.

Let Cool, and Break It Apart

After you take the caramel corn out of the oven, let it cool completely. Then break it apart with your hands. And there you go! You just made awesome Caramel corn!
